INGREDIENTS

  • 4 Wild Salmon Collars
  • 1 tbsp  Sesame oil
  • 1/4 cup Soy sauce
  • ½ cup Mirin, or rice vinegar mixed with 2 teaspoons sugar

SAUCE

  • 1/3 cup lemon juice
  • 1/3 cup lime juice
  • 1/3 cup orange juice
  • 1 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup mirin

INSTRUCTIONS

  1. Put the sesame oil, soy and mirin in a container and toss with the salmon collars
  2. Cover and marinate for at least 20 minutes, 2 hours is better or as long as overnight, no longer than that and the fish will get too salty
  3. Mix all the ingredients for the sauce and set aside
  4. Grill the fish in medium heat. Make sure the grill grates are hot, and spotlessly clean
  5. Dip the paper towel in vegetable oil and wipe down the grill grates
  6. Lay the fish down skin side out. Cover the grill and cook until the skin side gets a little charred and a lot crispy, about 5-6 minutes
  7. Carefully flip the collars with a large metal spatula and cook for another 4-6 minutes on the meat side
  8. Serve with steamed rice and the sauce on the side

材料

  • 野生三文魚鮫
  • 1 湯匙 芝麻油
  • 1/4 杯 醬油
  • ½ 杯 味醂, 或米醋混合2茶匙糖

醬汁

  • 1/3 杯 檸檬汁
  • 1/3 杯 青檸汁
  • 1/3 杯 橙汁
  • 1 杯 醬油
  • 1/4 杯 米醋
  • 1/4 杯 味醂

香烤三文魚鮫

  1. 將魚,芝麻油,醬油及味醂放在碗裡混合
  2. 蓋上並醃最少20分鐘,最好醃2小時或最長醃一個晚上,不要太長否則會太鹹
  3. 將其餘材料混合成醬汁,待用
  4. 用中火燒魚鮫,確保燒烤爐夠熱,並一塵不染
  5. 用紙巾浸植物油並擦拭燒烤架上
  6. 把魚鮫有皮的一邊放在烤架上,蓋上並烤至魚皮有少少燒焦及變香脆,大約5-6分鐘
  7. 用燒烤夾小心翻轉魚鮫再燒大約4-6分鐘
  8. 配上米飯及醬汁食用
