INGREDIENTS
- 400 g Searay White Shrimp
- ¼ cup frozen green peas
- 1 clove garlic, crushed
- 1 stk green onion, diced
MARINATE
- 1 tbsp egg white
- ½ tsp salt
- ½ tsp sugar
- ¼ tsp pepper
- ¼ tsp sesame oil
- 1½ tsp corn starch
INSTRUCTIONS
- De-shell shrimp, rinse, blot dry
- Marinate for half hour and then refrigerate for 2 hours
- Heat oil in wok, quick fry shrimp and set aside
- Saute garlic, stir fry green peas and green onion
- Return shrimp to wok, Add a splash of cooking wine
- Stir fry well and dish up
材料
清炒蝦仁
- 白蝦去殼, 用水沖片刻, 吸乾水份
- 加入醃料拌勻, 醃約半小時, 然後置雪櫃內冷藏約二小時
- 熱鑊落油適量, 將蝦走油, 取出蝦
- 傾去油, 爆香蒜頭, 炒青豆,葱粒
- 將蝦回鑊, 灒酒, 炒勻
- 上碟供食
