INGREDIENTS

  • 400 g  Searay White Shrimp
  • ¼ cup  frozen green peas
  • 1 clove garlic, crushed
  • 1 stk green onion, diced

MARINATE

  • 1 tbsp egg white
  • ½ tsp salt
  • ½ tsp sugar
  • ¼ tsp pepper
  • ¼ tsp sesame oil
  • 1½ tsp corn starch

INSTRUCTIONS

  1. De-shell shrimp, rinse, blot dry
  2. Marinate for half hour and then refrigerate for 2 hours
  3. Heat oil in wok, quick fry shrimp and set aside
  4. Saute garlic, stir fry green peas and green onion
  5. Return shrimp to wok, Add a splash of cooking wine
  6. Stir fry well and dish up

材料

  • 400 克  海威白蝦
  • ¼ 量杯  急凍青豆
  • 1 瓣  蒜頭,  拍鬆
  • 1 棵  青葱, 切粒
醃料                    
  • ½ 茶匙  
  • ½ 茶匙  
  • 1 湯匙  雞蛋白
  • ¼ 茶匙   胡椒粉
  • ¼ 茶匙  麻油
  • 1½ 茶匙  粟粉

清炒蝦仁

  1. 白蝦去殼, 用水沖片刻, 吸乾水份
  2. 加入醃料拌勻, 醃約半小時, 然後置雪櫃內冷藏約二小時
  3. 熱鑊落油適量, 將蝦走油, 取出蝦
  4. 傾去油, 爆香蒜頭, 炒青豆,葱粒
  5. 將蝦回鑊, 灒酒, 炒勻
  6. 上碟供食
