INGREDIENTS
- 1 Searay Yellow Croaker, approximately 1 lb
- 2 cloves of garlic, crushed and peeled
- 1 tbsp shredded ginger
- 1 stk green onion, cut into thin slices
SEASONING
- 2 tbsp Maggie soy sauce
- 1 tsp pepper
INSTRUCTIONS SERVES 2
- Thaw fish, gut and descale
- Rinse and then blot dry
- Coat well with 1 tsp of salt
- Heat 2 tbsp of cooking oil and pan fry garlic until fragrant
- Add fish and pan fry until golden on both sides
- Add a splash of cooking wine, a quarter cup of water, ginger and seasoning ingredients
- Fry for a few minutes
- Garnish with green onion

美極煎黃花魚
- 將魚解冰去鱗, 去腸臟, 洗凈, 吸乾水份
- 用1茶匙鹽塗勻魚身
- 熱鑊落油2湯匙爆香蒜頭, 煎魚至金黄色, 反轉亦煎至金黄色
- 灒酒, 加入1/4杯水, 調味品, 羌絲, 煎片刻
- 放上葱, 上碟供食
- 吃起來鮮甜美味, 好像在香港時所吃到的黄花魚, 並無分別
